1Quinoa Fruit Salad

Ingredients of the salad:
- Quinoa of 1 cup.
- Two cups of water.
- Salt to taste.
- Blueberries of 1 and 1/2 cups.
- Cut mango of 1 and 1/2 cups.
- Cut strawberries of 1 and 1/2 cups.
You may use your favorite fruit in the salad to your personal preference.
Ingredients for the Honey lime dressing:
- Extracted juice of a large lime.
- Honey of three tablespoons.
- Mint (chopped) of two tablespoons.
To prepare, gently wash the quinoa in cold water. Take a saucepan and put the quinoa, salt, and water and let it boil just over medium heat. Let it boil for 5 minutes and after that, lower the heat and continue for another 15 minutes or until all the water disappears. Now, remove it from the heat and let it cool. To prepare the dressing of honey lime, take a medium bowl, stir the lime juice, mint and honey until it combines. Now take a large bowl, add the quinoa, mango, blueberries, and strawberries. Let the honey lime dressing flow over the fruit salad and gently mix it. You can also add mint for garnishing. That’s all, you are done and you may serve it either chilled or at room temperature.
